Why does dish soap work so well on grease?
Dish soap contains surfactants with a hydrophilic head and hydrophobic tail. The tails surround grease molecules; the heads are attracted to water, pulling the grease off with rinsing.
Why does putting oil on an oil stain help?
Fresh oil (like WD-40 or vegetable oil) penetrates between dried grease and fabric fibres, re-lubricating the bond and making it easier for soap to lift both.
